Happy Thanksgiving Hop with Melissa Landers

I adore Melissa Landers you guys! If you haven’t yet read her books, I can’t tell you how much you need to change that! While I love her Alienated series, I absolutely can not wait for the second book in her Starflight series!  I’m so excited she was able to share a favorite recipe with us for the hop, but before I share it with you, let’s talk about her books!

Melissa Landers Thanksgiving Recipe

Happy Thanksgiving! I’m Melissa Landers, and I’d like to share my favorite holiday dish, Sweet Potato Soufflé, which I discovered at an Ohio dinner theater called La Comedia. This soufflé is to die for. It tastes like pecan pralines, and it’s SO easy to make! So without further ado, here’s La Comedia’s recipe for Sweet Potato Soufflé.

4 cups mashed sweet potatoes (I use canned because I’m lazy)

1 cup sugar

2 eggs

1/2 cup milk

1/2 tsp. salt

1/3 stick butter or margarine (melted)

1 tsp. vanilla

Mix well

Pour into buttered pan

 

Topping:

1 cup brown sugar

1/2 cup flour

1/3 cup butter or margarine (melted)

1 cup pecans

Crumble topping evenly over potato mixture. Bake at 350 for 35-45 minutes uncovered.
